The best tasting lings, to me at least, have had
flesh somewhat turquoise in color. When cooked, they
all turn white in the end.
On of the absolute BEST lings I have eaten was
caught just S of Eureka while on a day salmon trip
aboard the Celtic. While we all caught our limits
of salmon that day, most of the other fishermen were
jealous of my blue fleshed ling.
