I have a stainless plate which I use for everything from single tank tropical diving in a 4/3 mm wetsuit to double steel tanks with a drysuit. Ideally for warm water you would want the aluminium plate so as not to be overweighted but I find with the 4/3 that I still need about 6 lbs of lead so that hasn't really been an issue for me. I suppose it might be if you were diving with a shorty or a skin. For diving with a 6.5mm wetsuit the SS plate would seem to make the most sense. Since it sounds like don't want to buy both I'd go with the SS plate. The choice of wing will hinge on what kind of tanks you dive with. I'd probably want the 36lb wing with the big steel tank.
