Don't know if you'll be happy with a sit-in for scuba diving. Free diving maybe yes, but not scuba. For your situation, I'd suggest to look at Ocean Kayak's Fish'n Dive. It is the most voluminous one I know of. They also came out with a new one (can't remember the name) that features a removable top to convert it from sit-on-top to a sit-inside and back, but it does not have a tank well, and, it is 16' long!

What's a K-1 diver? I know, if I have to ask, I can't be one. But what is it anyway?

I've been kayak diving since a year and a half now and use a Cobra Tourer. Most of the time, we go either Pt. Vicente (launching at Long Point), Pt. Dume, or Leo Carillo. We're a fun bunch of guys and you're welcome to join us, if you like.
