Stability is the No. 1 concern for dive kayaks. You'll find that the hull designs thata give you stability take away speed, so it is a trade-off.
If you want to kayak dive in the ocean, you'll definitely want a dedicated dive kayak.

About your cooler--don't know what size you use, but you might find that it won't fit into any of the hatches. No problem, though, if you strap it securely. Like anything else that is not secured into hatches. Mark Theobald will stress this point repeatedly on his site www.kayakdiving.com and in his book that is worth the small investment, and once you have read it and prepare accordingly, you've learned your ropes already.
