Your friends down at Puerto Nuevo are right.

1.5 to 2.5 pounders are the best size. Larger than
that they get too tough to eat broiled, boiled,
MW'd or BBQ'd. When the meat gets that tough, it's
better to just cube it up and use it in stews and
bisques... the extra cooking time basically ensures
the meat is broken down enough to not be chewy. The
taste of the larger lobbies isn't as sweet either,
especially noticed when eating as sashimi.

I came into a nice 4 lb + bug this past weekend. I
diced up his tail and larger leg meat and stuck it
in a freezer baggie to make chippino this holiday
season.
