Quickly off the top of my head:

Textbook - $40
Pool rental - $30/student
Rental gear - $100
Classroom proration - $30/student
Staff time (gear pulling, washing, transport, etc.) - $20/student
Handouts - $10
Avalon trip (w/boat, taxi, airfills, and covering instr. & asst. costs) - $75
Boat trip - $60-$100
Pro-rated insurance - $10/student
Pro-rated NAUI/PADI dues - $5/student
Instructor fee - $75-$100
C-card - $11

TOTAL - $466-$531

But your overall point is right. My estimate of $350 was off the mark.
