When you eat Urchin, you are only brightly colored
parts that are attached to the inside walls. That is,
unless you are a deeply desturbed individual who enjoys
eating the "snot" or remainder of the critter.

Fresh Uni has a slighlty nutty and meaty quality to it,
and is often served in Sushi bars. The fresher the
better, and I have seen stuff at sushi bars that is
four or five days old, and looks horrible.

Some jazz up the fresh stuff with tabasco or lemon,
but that is really just masking the taste ( sorry Dale ).

Cooked Uni can be used in a variety of dishes. Any
dish that you could add clams or scallops to, you could
use Uni. I especially like to make a very simple pasta
and cream sauce, and then blend in a few good sized pieces
of urchin before serving. It tatses just like I added
the freshest hard creese to the dish.

In fact, thats what I had fopr dinner last night.
