You can find the fresh stuff at the Tokyo Style sushi houses, ie the ones with no signs out front, a bunch of dour looking japanese guys in dark suits eating at the bar, and no menus or prices. A friend took me to such a place near my house in LA that I didn't even know was there. The Uni there couldn't have been more than 6 hours out of the sea. Delicious. When the bill came; $250 for 2 people!!!!! Needless to say I haven't been back recently, although it was the best sushi I ever ate.
