Also, to clarify, the parts of the abalone one would normally use were the parts that you cut away before you cut your steaks. AKA "scraps"
In the "old days" the lobster trappers used to buy the scraps from the abalone processers and use them for bait. I believe I can locate a California Fish and Game publication in my collection that suggests that this is excellent resource conservation.
Obviously times have changed.
