Freezing tails

If you twist the tail just right, most of the meat from the carapice comes off with it. Then I do the antenna trick.

I wouldn't advise washing your tails in fresh water. In fish, fresh water leeches the salt out of the meat, leaving the it mushy. I'd assume the same applies for bugs, but I could be wrong.

Anyhow, if you're not immediately consuming the tail, I would advise wrapping it in plastic wrap, then tin foil, and then stick it in a ziplock and freeze it.

Defrost it overnight in the fridge, and it's 95% as good as fresh. Wash it before you cook it.

Now that I have a vacuum sealer I just wrap them in tinfoil (so the spikes don't pop the bag) and then vacuum seal it. I haven't tried one yet to see if they're better/worse.
