if you subscribe to the same-day principle, you might consider to use a thin, long kitchen knife to cut out the scallop's muscle and leave the base shell attached to the reef.

If you bend your knife to a shape similar to the curvature of a scallop, you will be able to insert this knife into the still open scallop and then cut off the muscle close to the base shell. Then, cut away the muscle completely, feed the outer organs to the fish(which they love to eat, so you get a little fish feeding show at the side) and just take the muscle with you in a small zip lock bag.

This way, you can even harvest scallops that are fully grown into the reef and could not be harvested at all or at least not without significant collateral damage to the reef. And who would want to do that!
