They definitely have to be eaten the same day. They loose their delicate sweet flavor after being refrigerated.
As a rule I don't take any scallops smaller than the palm of my hand. Where they are attached and how easy the come off determines weather I take the whole scallop or just cut the meat out. Leave the ones that are to hard to get as you will end up cracking the shell and won't be able to get the all the meat out.
If you cut the meat out be sure you get it in one piece or it counts as two scallops. Fish and game will count each piece of meat as an individual scallop(limit 10 per day)
