1) Keep air out to reduce oxidation.
2) Help frozen food make it through power outages, becasue the inside will remain frozen even as the surface of the ice melts.
3) It is a system that has worked great for me for years, and becasue it works well I do not want to risk damaging the seafood I have caught with a method that I am unsure about.
