I tried the "uni" thing myself not too long ago, and it was not as easy to get out of the shell in-tact as one might imagine. The uni at the sushi bar is treated with some chemical to give it a slightly firmer texture and I think that must make a big difference. My "ocean-fresh" uni did not have quite the same flavor I have come to expect from my local Sushi Chef.
