I have to agree with Karl that said Uni tastes a bit like avacado.
One thing I noticed, while you don't necessarily want to take the
biggest urchins, I am seeing a lot of urchins that seem to be the
next generation after the harvesters have gone by and while they
look pretty mature, their test (central ball) is actually only
about 2 to 2 1/2 inches across. I'd wait for those to grow
some.
