Ed's suggestion of Catalina is very good.
You could also look at www.californiadiveboats.com for a boat near where you will be, check their schedule and see what you can do.
For more info on California diving, may I suggest you check out www.diver.net/seahunt . There is a fair amount about the diving available, what you might see and what to expect on the boats.
As Ed said, it's a big state. It all depends on where you will be???
