Freezing Lobster

Just the 2 days ago I raided my dwindling supply of frozen bugs to BBQ and they came out as good as fresh. Here’s what worked for me:

Freezer for 10 minutes to slow em down
Twist off the tail
Cut open the carapace on both sides (better for the BBQ as u can put garlic butter on both sides)
Remove the intestine
Rinse and shake off as much water as possible
3-4 tails into a freezer bag (push out as much air as possible)
Another freezer bag around the first

Anyone have any tasty recipes?

BTW, season opens in 49 days (and counting). Is it just me, or do the bugs seem bolder this time of the year?
