ALtough it could have been a 'poached' lobster, it is also very possible that it was 'taken' by another aquatic animal... Especially if there were still some flesh on it...
I have seen lobster parts/carapace, etc, thinking the same thing... until (at least one occasion) I saw the 'poacher'.... an Octopus! The front of his den was littered with lobster parts....
