Much of the take is shipped to Japan; the US commercial fishery takes much better care of the catch than most other places of the Pacific Rim.
The Japanese market doesn't mind paying a premium for high quality product.
Maine bugs are actually cheaper than spineys; you can buy the "real" lobster cheaper in the grocery store than what we were getting paid at the dock selling spineys by the half ton.
