Only way to test it is to install it in something that can be sealed up (using the zipper as part of the seal), then inflated to see if any air bubbles out. And if you're gonna do that, you might as well just install the zipper in the drysuit anyhow since part of the non-leakiness of it is not only the zipper but also the seams that sew the zipper into the suit.
