As far as dive shops, the ones I used this last time were Bubbles Below and SeaSport Divers. Both were very good. Their links are below.
Each shop offered different dive sites, with Bubbles Below staying more on the West/Southwest side (Pt. Allen) and SeaSport staying somewhat around Poipu. You will definately end up at Tunnels if you go with SeaSport.
When I was there in October, I did 2 night dives with Bubbles Below and there were only 3 divers on the boat. It was great.
SeaSport Divers usually videotapes the dives and they are available for purchase.
