You can steam or boil the legs just like you would a dungeness crab. The shells are very thick and you will need a hammer to open the legs to get at the meat.
I would suggest that you treat them like they do the stone crabs in Florida. Only take one leg/claw and leave the crab alive and able to grow a new one. It's a heck of a lot easier than trying to stuff the whole crab into a game bag!
