I've done both the Aquatica and the King Neptune. You will enjoy either as long as some sharks cooperate. A cage isn't really necessary as long as you are somewhat comfortable with the situation. The advantage of having a cage available is that on both trips we had visits from Mako sharks. The cage provided a safe haven for viewing the Mako and in that instance was a very nice feature. On trips without cages they usually ask that you get out of the water should a Mako show up. If I could get April 24th off I'd be out there on the N"toon" in a heartbeat!
