I have fished locally since 1963.
In that time I have tried to eat almost species that I caught in local waters.
Batray tastes like crap.
Those who insist they make "scallops" from the wings are clueless.
The wings, (where the meat is) have cartilage plates in them.
Batray meat has a very strong unpalatable flavor.
The California Thornbacks (banjo sharks) are also unpalatable.
The guitarfish (shovelnose sharks) are actually quite tasty and I would rate the meat a 7.7 on a scale of 10.
Angel Sharks, which seem to be somewhat rare, are very good and the meat rates about a 9 on a scale of 10.
