Call the local dive shop of where your are staying. I would bet that just about any shop can find you an instructor that can do the intro to scuba with the non diver of the party. It will take some pool time and class time before you go out on a boat though and will probably double or triple the cost of going out on the boat. You will be paying for the instructors time, and paying to get him/her on the boat.

If you are in the LA area try Pacific Wilderness in San Pedro,Ken Kurtis out of Ken Kurtis of Reef Seekers Dive Co. in Beverly Hills, CA, Scuba Toys - Jim Hoffman in Cypress (towards Disney Land but nowhere near it). Unless you happen to find a full itme instructor you may be hard pressed to find someone to do it mid week.
