Actually I've looked at a lot of your pics for that. You've put up a few pics of morays with lobsters in their holes. In most cases the lobster does have both antennae forward. Back when I first did a lot of diving at Catalina, say 28 years ago, there were a huge number of lobster and morays (and big green abs). If it hadn't been for the incredible number of morays, lobstering might have been easier. Eagle's Reef was commonly called Eel's Reef. At that time, typically the lobsters in a hole with a moray would point one antennae back, presumably at their buddy.
I don't know what to make of the change.
