Why not take mom along to your favorite beach dive and let her see you dive? While you're underwater, she can scout the beach for shells, feed the gulls, or read a book. (Of course, some moms may actually want to dive with you - nothing wrong with that). Then take her to Dukes or a local Tiki restaurant to finish off the day (keep teh theme nautical).
