I tired this once a few years ago after seeing your instructions, Seahunt. One problem is that commercial prepared urchin is treated with some solution that makes if a bit firmer and does something for the taste.

My experience was thatI got a big red urchin and cracked him open but found the roe to be very delicate and very mushy. It did not match the good flavor I usually find at my local sushi shops. Until I find out what the commercial guys do to it I think I'll just leave the urchin where they are.

Another thing I found out is that those red urchins are very long lived, so there's another reason not to kill them.
