We have enjoyed a 3 day dive on the Great Escape Memorial Day and Labor Day weekends for years. Check the Great Escape website...its chartered by Esther Carbonel for these great trips - all inclusive 3 days of diving. A real bargain (great food and a wonderful Captain / crew). Just be sure you can handle a boat for 3 days out. Usually quite a few couples on these trips.
Water temp is 52 or so in May and 58 to 68 (depending on the island / dest.) in Sept. The Channel Islands are world famous sites - don't expect Cozumel water temps, though! A 7 mm wetsuit, hood and gloves (which you can rent at one of the shops here) would suffice. The kelp is fantastic and we usually see plenty of sea lions.
