SoCal Winter Boat dive for new divers?

After reading the reviews on this board, it looks most of the boat dives in Southern California are good. However I have noticed that the dives were on the deep side.
What boat would you recomend for inexperienced divers? And is it a wise idea at all for new divers to try California diving during the winter?
