Try cutting through a couple of pieces of various types while holding your breath. How long does it take? Are you comfortable knowing you might have to do that at depth? I had a nice shiny Blackie Collins 304 stainless steel knife, and the factory edge was unimpressive. If you don't like the results you get from your tests, do as I did and take a grinding wheel to the edge and put a nice nasty fifteen degree edge on your knife(s). The stainless steel won't care and it's a much more effective tool.
