On Grand Cayman, try an East End Wall dive trip. For a great shore dive, go to Dive Tech, (I think its still called that). Its located near the Cayman turtle farm. I've always called the site Turtle Farm Reef. Its a mini wall dive where the sand bottom is in approx. 70-75 feet of water and the wall itself goes up to about 40 feet of water. The spot is located approx. 50-75 yards from shore, so you can easily navigate back to your entry point underwater. furthermore, the big wall/dropoff is probably 50-100 yards past the mini wall, if you want to make the swim, but beware of boat traffic and long shore currents.
