What part of California are you planning on visiting? So Cal, Central Coast, or Nor Cal? That makes a big difference. Nor Cal (Montery and north) tend to be colder, but the diving can be spectacular.
The LA area has Catalina, Santa Barbara & San Clemente Islands, which offers some really great diving.... at all levels.
San Diego has "Wreck alley" and the "Yukon" wreck dives. Very nice. La Jolla cove is also nice I've heard.
If you just want to do some good diving and then follow it up with some more good diving, then try the 3 day trip from Truth Aquatics in Santa Barbara.
Be safe and have fun!
