I second the shark dive. I just came back from Roatan and did that dive 2 weeks ago. They are beautiful creatures and it was amazing that you end up with more a sense of wonder than fear.

We stayed at Fantasy Island and had a wonderful time. Great wreck just off shore as well as easy access to the cocoview wall. Don't forget to squeeze in a night snorkel. In 3ft of water and 1hour of snorkeling we saw 3 octopus, 3 spotted eels, a hermit crab the size of a football, and tons of shrimp just to the left of the gazebo.
