I'm not Hashbrown, but to jump in ... there are several good diving resorts on Roatan. A lot of people like Coco View, but Fantasy Island and the Inn of Last Resort are also good. Typically they schedule a deeper dive in the morning (~100 feet or slightly deeper), with shallower dives (~40 feet) later. They usually also throw in at least one night dive during the week. The dives from the resorts are generally led by divemasters. Generally they'll do a checkout dive at first to get a sense of your diving level, and can adjust their level of in-the-water supervision accordingly. The shark dive is a separate operation that you can book through the resorts. Exposure protection depends on your sensitivity to cold, but 3mm wetsuits are typical. Many resorts offer nitrox -- your call on whether you think it'd be valuable to you.
