It is a technique Great Whites use to kill prey, go for the head and less chance of getting hurt by flailing prey. In Northern CA, we lost an abalone diver to this very thing a few years back. They recovered his headless body the next day and his head washed up on shore a couple weeks later. Gross I know, but its one of the stories I use to tell people we really aren't Great White prey, its usually an accident. Doesn't make the guy who died feel any better, though. Be careful out there, don't be an accident.
