Last summer my wife and I were vacationing in Acadia Park Maine and we were dieing to try the lobster rolls that we had heard so much about! Not impressed  ,,, If you haven’t had one, they are a hot dog bun stuffed with lobster meat moistened with enough mayo to bind the whole thing together. They where ok but we thought we could do better. Last night we tried our own version and we liked them a lot more. We chopped up two boiled, then chilled lobster tails, (local of course!) added about 1/8 cup finely chopped sweet onion, ¼ cup finely chopped celery, ½ teaspoon Old Bay Seasoning, a little salt and a little pepper, then covered it and chilled it in the fridge to let the flavors meld for a while. (1 dog walk). Then we scooped generous portions into potato rolls. Try it when you get tired of broiled lobster and Lobster Newburg and Lobster Tacos and Lobster Pasta and……
