Eric and crew are really nice and you can't beat the food. Captain Fidel posted a charter trip recently on this board, maybe it would work for you. You might also want to try the Explorer in Ventura for spear fishing. The Volaski's who run it know fishing sites like no one else. As for the Truth boats in Santa Barbara - they are nicely appointed, but I have had several less than favorable trips on them (Captains pilot like novices and the crew seems to be doing you a favor to be there). Seem to be oriented to the casual diver seeking amenities. Maybe your experience would be different.
