My $.02 would be to go with your idea and finish the entire process at home. Start and finish with one instructor. Then go to Catalina and enjoy the dive. I did my OW class at Casino Point, which was nice, but I didn't get to really enjoy the sea life there until we were finished with the class and I was on my own. I do like the idea of going with an experienced diver for their first ocean dive.
