I think the only people who have much of any interest in urchins are the Japanese and maybe the Koreans. And maybe only Chinese individuals who've been exposed to sushi.

I know of a grocery store in Oakland Chinatown that sells farmed red abalone in a live tank for $25/lbs; there's often about 50 of them in a 55 gallon tank and they have the cleanest shells I've ever seen but they're only 3~5 inches in width. I've never seen anyone buy them, but every time I'm there, the abs are all alive. I'll try to take a snapshot some time.
