The Spectre also runs on Wednesdays. Here is a link to the Oct calendar They run in the Channel Islands area (Farther North than Catalina)

Check to see if the Pacific Star has weekday dives. That boat has a very good crew. They are more in the LA area.

Another Option:

Catalina also has a dive park for shore diving. You'll have to take the catalina express over to the island. At the dive park the have tank rentals and gear rentals. Refills as well.
