It may be too late to book for that week for this year. It's high season and most places are already full. Cayman is very, very expensive...for what a week would cost on GC, you could stay for two weeks in Cozumel. The water will be in the mid to high seventies. If you want warmer water, think about flying to the PI or Indonesia.
