I prefer my Urchin freshly pried from a rock, expertly prepared on the most convenient somewhat flat table height rock, on the beach, sliced open with a dive knife or ab iron whatever is available. Might have to try eating one while diving on SCUBA freshly marinated in salt water. I know that Scallops are very tasty that way.
