I have a Zeagle Tech which I used a few times with doubles (along with Zeagles long cam bands.) But after trying an aluminum backplate and wings, I retired the long straps and set up a single bottle plate/wings rig. The plate adds a lot of stability that the soft back pack system doesn't provide.

Your post sounds like you are considering doubles for your first personally owned bottles. You might want to rethink that. The extra weight and bulk makes doubles a liability when you don't need the additional breathing gas. If you do any beach diving, you'll hate them.

AL 80s are cheap, as are used steel 72s (the 2250 psi ones.) You could buy the two rigs (at least the 3 tanks) for about the price of a large volume single. As for the pony, if you need additional gas, use the doubles.
