Cabo, You dive with the equipment configuration that fits the dive. On a deep dive (60-130) I would dive with doubles (80's, 95's)and maybe a 40 stage bottle.
In the shallow water I think a single tank is fine (if you want to take a pony, that's fine to). The key is that you manage your air and have a plan.
