Pick up large ones, but not the largest.
Just break their spines off. it can be done with no gloves, but any gloves will work. Just don't stab yourself. Break the big ones short and then just break them all off.
Make a small hole in one end so that you can get a couple of fingres in and pull them open.
Then carefully get out the roe, clean it and rince it once in fresh water.
Maybe some line juice. I thought that they were good on Ritz crackers.
Try them with some sushi scallops.
