It's more efficient to cut under their "chin" to bleed them. The fish's heart extends to the chin and a small cut will result in an immediate bleed out. Keep them on ice and they are as good eating as any tuna. Most people don't treat bonito right once they catch them; they throw them on the deck or in a gunney sack and leave them in the hot sun all day. No wonder some people don't think they're any good to eat!
