Most boats do about 10 knots. It is a bit over 20 nautical miles to Catalina, hence the 2 hour time. There are some smaller boats that go faster, but there is no where to get out of the elements.

As far as dive sites, much of that is determined by the charter group. If it is a shop with classes, you get shallow dive sites. However there dive sites at Catalina that can suit both classes and other divers.
One of the reasons I dive with, and now run the trips for the Sea Divers is that it is an independent club for advanced divers and hence goes to good dive sites. If you have good diving skills I would recommend trying a trip with us.
As for boats all of the suggestions so far are good if you go with the right group.
The Great Escape, Magician, Sun Diver, and the Pacific Star are all good choices.
