From my understanding they are riding on the pressure wave created by the boat which pushes them along. Similar to riding a breaking wave on the shore.
I'm no expert on dolphins but to me it appears that they do it for fun & maybe an easy ride from time to time. I have seen them make a 180 to come ride my bow wave, so this leads me to think it was for fun.
I do worry that some day one is going to get into my prop and get killed.
