You can eat all the urchins you find, but the best are the big ones. Color doesn't matter.
I have pulled uni pieces out of the big ones off San Nick and Malibu that are 3 inches long.
What many diver do not know is that Japanese business men fly into southern California on Lear jets and meet boats at the dock with dry ice and suitcases full of cash. They buy whatever they can,and return to Japan.
"Channel Island" Uni is considered the very best in the world.
I eat it every weekend. Its also wonderful to mix into a simple cream pasta. It tastes like you added cheese to the pasta.
